The cuisine of Mahajanga and the Boeny region is deeply rooted in local ingredients, with a strong emphasis on fresh seafood, zebu meat, and coconut milk. As a coastal region, Mahajanga offers an abundance of grilled fish, prawns, lobster, and crab, often marinated with local spices and served with rice. A popular dish is fish in coconut sauce, where fresh-caught fish is slow-cooked in a rich, creamy coconut milk base infused with garlic, ginger, and tomatoes. Another traditional favorite is masikita, skewered and grilled zebu meat, which is often paired with spicy condiments and served alongside rice or cassava leaves.

Cassava leaves (ravitoto) are a staple in Malagasy cuisine and are widely consumed in the Boeny region. One of the most beloved dishes is ravitoto sy henan’omby, where finely pounded cassava leaves are slow-cooked with zebu meat and flavored with garlic and coconut milk, creating a rich and hearty stew. Another variation includes ro mazava, a light yet flavorful broth made with zebu meat, leafy greens, and sometimes baobab leaves. These dishes highlight the region’s tradition of using natural and locally sourced ingredients to create comforting and flavorful meals.
